Delicious End of Summer Recipe

Before all of the fresh summer produce is out of season, it is the best time to use all of the delicious summer ingredients for one last summer get together. Make sure to keep this tomato, basil & spinach risotto recipe in mind for your next end of summer dinner party.


  • 2 – ½ cups chicken broth
  • 1 tablespoon butter
  • 1 minced shallot
  • 1 minced garlic clove
  • Salt and pepper to taste
  • ¾ cup Arborio rice
  • ¼ cup dry white wine
  • 2 seeded and chopped tomatoes
  • 2 cups baby spinach
  • ¼ cup grated parmesan cheese
  • Handful of torn basil


  1. Bring the chicken broth to a boil in a small saucepan and reduce the heat to low to keep it hot.
  2. Melt butter over medium heat in a large skillet. Add shallot, and season with salt and pepper. Sauté until translucent, about 3 minutes. Add the garlic and sauté for 30 more seconds.
  3. Add in the rice and stir until it is coated in the butter mixture. Add wine and stir until absorbed by rice. Add ½ cup of chicken broth, stirring continuously until it is absorbed. Continue adding ½ cups of broth at a time, stirring until it is absorbed.
  4. When there is ¼ of the broth remaining, add tomatoes while continuing to stir. Add the baby spinach and basil with the last of the broth while continuing to stir. Stir in the parmesan cheese and add more salt and pepper to taste.
